Carrot Halwa

A traditional Indian sweet dish made with grated carrots, milk, ghee and sprinkled with nuts. Perfect to warm you up on a cold winter evening.

Here is a simple recipe for making Carrot Halwa:

Ingredients:

• 1 Ib grated carrots
• 1 cup whole milk
• 1 cup heavy cream
• 1 cup sugar
• 1/4 cup unsalted butter
• 1 tsp cardamom powder 1 tsp vanilla extract
• 2 tbsp chopped almonds (optional)

Instructions:

  1. In a heavy-bottomed pan, heat the butter and add the grated carrots. Cook until the carrots are soft and have lost some oftheir moisture.
  2. Add the milk, cream, sugar, and cardamom powder. Stir until the sugar has dissolved.
  3. Cook over low heat, stirring frequently, until the mixture thickens and the liquid has evaporated (20-30 minutes).
  4. Stir in the vanilla extract, and chopped almonds Serve hot or chilled, garnished with a sprinkle of chopped nuts, if desired.
