Curd rice recipe

Ingredients:
• 1 cup cooked rice
• 1 cup plain yogurt (curd)
• 1 tablespoon oil or ghee
• 1/2 teaspoon mustard seeds
• 1/2 teaspoon cumin seeds
• A pinch of asafoetida (hing)
• 1-2 green chilies, finely chopped
• 1/2 inch ginger, finely grated
• A few curry leaves
• 2 tablespoons chopped coriander leaves
• Salt to taste

Instructions:

  1. In a mixing bowl, mash the cooked rice gently with a fork to make it slightly mushy.
  2. Add yogurt and milk (if using) to the rice and mix well to combine. The rice should be well coated with the yogurt.
  3. In a small pan, heat oil or ghee over medium heat. Add mustard seeds and let them splutter. Add cumin seeds, asafoetida, chopped green chilies, grated ginger, and curry leaves. Sauté for a minute until fragrant.
  4. Pour this tempering over the curd-rice mixture and mix thoroughly.
  5. Add chopped coriander leaves and salt to taste. Mix again.
  6. You can adjust the consistency by adding more yogurt or milk if needed.
  7. Let the curd rice sit for about 10-15 minutes to allow the flavors to meld.
  8. Serve the curd rice as is or with some pickle on the side.
