  • 1.5 lbs Ground Turkey
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 large Bell Pepper, chopped
  • 28 oz Diced Tomatoes (canned)
  • 15 oz Kidney Beans, rinsed and drained (canned)
  • 15 oz Black Beans, rinsed and drained (canned)
  • 2 tbsp Tomato Paste
  • 1 cup Chicken Broth
Spices
  • 2 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Oregano
  • 0.5 tsp Cayenne Pepper (optional)
  • 0.75 tsp Salt
  • 0.5 tsp Black Pepper

Method
 

Preparation
  1. In a large pot or Dutch oven, brown the ground turkey over medium-high heat, breaking it up with a spoon. Drain any excess fat.
  2. Add the chopped onion, minced garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5-7 minutes.
Cooking
  1. Stir in the tomato paste, diced tomatoes, kidney beans, black beans, chicken broth, chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper.
  2. Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 30 minutes to allow the flavors to meld. Stir occasionally.
Serving
  1. Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, green onions, or cornbread.

Notes

For extra flavor, let the chili simmer longer, or even prepare it a day in advance as the flavors deepen overnight. Adjust the cayenne pepper to your preferred level of spiciness. This chili freezes well for future meals.
