Preparation
- In a large pot or Dutch oven, brown the ground turkey over medium-high heat, breaking it up with a spoon. Drain any excess fat.
- Add the chopped onion, minced garlic, and bell pepper to the pot. Sauté until the vegetables are softened, about 5-7 minutes.
Cooking
- Stir in the tomato paste, diced tomatoes, kidney beans, black beans, chicken broth, chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper.
- Bring the chili to a simmer, then reduce heat to low, cover, and let it cook for at least 30 minutes to allow the flavors to meld. Stir occasionally.
Serving
- Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, green onions, or cornbread.
Notes
For extra flavor, let the chili simmer longer, or even prepare it a day in advance as the flavors deepen overnight. Adjust the cayenne pepper to your preferred level of spiciness. This chili freezes well for future meals.
