Cupcake Preparation
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, combine the granulated sugar, egg, milk, vegetable oil, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Carefully stir in the boiling water until the batter is smooth.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
Chocolate Frosting Preparation
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and cocoa powder, mixing until well combined.
- Stir in 2 tablespoons of milk and the vanilla extract. Add more milk, one teaspoon at a time, until the frosting reaches your desired consistency.
- Frost the cooled cupcakes as desired.
Notes
For an extra rich chocolate flavor, use dark cocoa powder. These cupcakes can be stored in an airtight container at room temperature for up to 3 days.
