  • 1 tbsp Dijon mustard
  • 2 tbsp all-purpose flour
  • 2 tbsp vegetable oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

  • 12 oz egg noodles cooked according to package directions
  • fresh parsley chopped for garnish

Method
 

Cooking Instructions
  1. Season beef strips with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat, then brown the beef in batches and set aside.
  3. Add onion to the skillet and sauté until softened, then add garlic and mushrooms, cooking until tender.
  4. Stir in flour and cook for 1 minute.
  5. Gradually whisk in beef broth, bringing it to a simmer and cooking until the sauce thickens.
  6. Reduce heat to low, then stir in sour cream and Dijon mustard, being careful not to boil.
  7. Return the cooked beef to the skillet; heat through and adjust seasonings as desired.
  8. Serve warm over cooked egg noodles, garnished with fresh parsley.

Notes

For extra flavor, deglaze the pan with a splash of red wine after browning the beef. You can adjust the consistency of the sauce by adding more broth or flour as needed.
