Preparation
  1. Slice the beef skirt steak against the grain into thin strips; cut bell peppers and onion into thin strips as well.
  2. In a bowl, whisk together lime juice, olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper to create the marinade.
  3. Add the sliced beef to the marinade, ensuring all pieces are coated; cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
Cooking
  1. Heat a large skillet or cast-iron pan over medium-high heat until very hot.
  2. Add the marinated beef to the hot pan in a single layer, cooking for 2-3 minutes per side until browned and cooked through; remove beef and set aside.
  3. In the same pan, add the sliced bell peppers and onion; stir-fry for 5-7 minutes until they are tender-crisp.
  4. Return the cooked beef to the pan with the vegetables, tossing to combine and heat through.
Serving
  1. Warm the tortillas according to package instructions, either in a microwave, oven, or on a dry skillet.
