Preparation
- Pat the chicken breasts dry with paper towels and season them with salt and pepper.
- In a bowl, whisk together the olive oil, lemon juice from one lemon, minced garlic, and oregano to create the marinade.
- Place the chicken in a shallow dish or a zip-top bag and pour the marinade over it, ensuring the chicken is fully coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Cooking
- Preheat your oven to 400°F (200°C) and slice the remaining lemon into thin rounds.
- Arrange the marinated chicken in a single layer in a baking dish and scatter the lemon slices over and around the chicken.
- Bake for 25-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
