Watermelon Feta Salad
  • 4 cups watermelon, cubed
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh mint leaves, chopped
  • 1 tbsp lime juice
Cucumber Dill Salad
  • 3 medium cucumbers, thinly sliced
  • 0.25 cup red onion, thinly sliced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp white wine vinegar
  • 1 tsp sugar
  • salt and pepper to taste

Method
 

Greek Quinoa Salad
  1. In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, halved Kalamata olives, and fresh chopped parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper to create the dressing.
  3. Pour the dressing over the quinoa mixture and toss gently to combine. Serve immediately or chill for later.
Watermelon Feta Salad
  1. In a large bowl, gently combine the cubed watermelon, crumbled feta cheese, and fresh chopped mint leaves.
