Ingredients

Crust
  • 3 cups graham cracker crumbs
  • 6 tablespoons granulated sugar
  • 1.5 sticks unsalted butter melted
Filling
  • 6 (8 ounce) packages cream cheese softened
  • 2.25 cups granulated sugar
  • 4.5 tablespoons all-purpose flour
  • 3 cups sour cream
  • 9 tablespoons heavy cream
  • 4.5 teaspoons vanilla extract
  • 9 large eggs

Equipment

  • Oven
  • 9-inch springform pans (3)
  • Large bowl
  • Electric mixer
  • Wire rack
  • Knife

Method

Crust
  1. Preheat oven to 350°F (175°C) and grease three 9-inch springform pans. Combine graham cracker crumbs, 6 tablespoons sugar, and melted butter, then press mixture evenly into the bottoms of the prepared pans.
Filling
  1. In a large bowl, beat softened cream cheese until smooth, then gradually add sugar and flour, mixing until just combined. Incorporate sour cream, heavy cream, and vanilla extract. Finally, beat in the eggs one at a time until just incorporated.
  2. Pour the filling evenly over the crusts in the springform pans. Bake for 60-75 minutes, or until the edges are set and the center slightly jiggles.
  3. Turn off the oven, crack the door open, and leave cheesecakes in the oven for 1 hour to cool slowly. Remove from oven, run a knife around the edge of each pan, and let cool completely on a wire rack. Refrigerate for at least 6 hours, or preferably overnight, before serving.

Notes

For best results, use full-fat cream cheese and allow all dairy ingredients to come to room temperature before mixing. This helps ensure a smooth, lump-free filling. Avoid overmixing the batter once the eggs are added, as this can result in cracks in the cheesecake. A water bath can also be used during baking to prevent cracking and ensure a more even bake, though it's not strictly necessary for this recipe if cooling slowly in the oven.
