- Heat a large skillet or griddle over medium heat and add a small amount of vegetable oil.
- Place one tortilla in the skillet and sprinkle half a cup of cheese over one half of the tortilla.
- If desired, add about two tablespoons of shredded chicken over the cheese.
- Fold the other half of the tortilla over the filling, creating a half-moon shape.
- Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly.
- Remove the quesadilla from the skillet, cut into wedges, and repeat the process for the remaining tortillas.
- Serve hot with salsa and sour cream on the side.
Notes
For extra flavor, you can add diced onions, bell peppers, or jalapeƱos to your quesadillas. Feel free to experiment with different types of cheese or add other cooked fillings like ground beef or beans.
