Ingredients
  

For Marinating Chicken
  • 1 kg Chicken Thighs or Drumsticks
  • 1 cup Plain Yogurt
  • 2 tbsp Ginger-Garlic Paste
  • 1 tsp Red Chili Powder
  • 0.5 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 0.5 tsp Garam Masala
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
For Biryani Layering
  • 2 cups Basmati Rice
  • 2 medium Onions, thinly sliced
  • 2 medium Tomatoes, chopped
  • 2 Green Chilies, slit adjust to taste
  • 0.25 cup Fresh Mint Leaves, chopped
  • 0.25 cup Fresh Coriander Leaves, chopped
  • 0.25 tsp Saffron Strands soaked in 2 tbsp warm milk
  • 4 tbsp Ghee or Oil
  • 1 set Whole Spices (Cinnamon stick, Cardamom, Cloves, Bay Leaf)
For Garnish
  • 0.5 cup Fried Onions
  • 0.25 cup Fresh Coriander Leaves
For Rice Cooking
  • 6 cups Water
  • 1 tbsp Salt
  • 2 Cardamom Pods
  • 2 Cloves
  • 1 Bay Leaf
  • 1 Cinnamon Stick
  • 1 tsp Oil

Method
 

Marinating the Chicken
  1. Combine chicken, yogurt, ginger-garlic paste, red chili powder, turmeric, coriander powder, garam masala, lemon juice, and salt in a bowl.
  2. Mix well and marinate for at least 30 minutes, or refrigerate for 2-4 hours for best results.
Preparing the Biryani Base
  1. Heat ghee/oil in a large, heavy-bottomed pot and add whole spices until fragrant.
  2. Add sliced onions and sauté until golden brown, then stir in green chilies and chopped tomatoes.
  3. Cook until tomatoes soften, then add the marinated chicken and cook for 10-15 minutes until partially cooked.
Cooking the Basmati Rice
  1. Wash and soak basmati rice for 30 minutes, then drain.
  2. Bring water to a rolling boil with salt and whole spices, then add the drained rice.
  3. Cook until rice is 70% cooked, then drain and set aside, reserving a bit of the cooking water.
Layering and Dum Cooking
  1. Layer half of the partially cooked rice over the chicken, then sprinkle with mint, coriander, and half the saffron milk.
  2. Repeat with the remaining rice, mint, coriander, and saffron milk.
  3. Drizzle with a tablespoon of ghee or oil and seal the pot tightly, then cook on low heat for 20-25 minutes (dum cooking).
Serving
  1. Gently fluff the biryani with a fork, mix the layers, and garnish with fried onions and fresh coriander.
  2. Serve hot with raita and salad.

Notes

For extra flavor, you can add a few drops of kewra water or rose water to the saffron milk. Adjust green chilies to your preferred spice level. Ensuring the pot is tightly sealed during dum cooking is crucial for tender chicken and aromatic rice.
