Ingredients

Cookie Dough
  • 1.5 cups all-purpose flour
  • 0.5 cup almond flour
  • 1 stick unsalted butter, softened
  • 0.5 cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon lemon zest
Filling
  • 0.25 cup raspberry jam
Garnish
  • 2 tablespoons powdered sugar

Equipment

  • medium bowl
  • large bowl
  • whisk
  • electric mixer (optional)
  • plastic wrap
  • rolling pin
  • fluted round cookie cutter (2-inch)
  • small cookie cutter (for cutout)
  • baking sheet
  • parchment paper
  • wire rack

Method

Preparation
  1. In a medium bowl, whisk together the all-purpose flour and almond flour; set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg yolk, vanilla extract, and lemon zest until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  5. Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out one disk of chilled dough to about 1/8-inch thickness.
  3. Using a fluted round cookie cutter, cut out 10 circles; on 5 of these circles, use a smaller cutter to make a cutout in the center.
  4. Carefully transfer the cookies to the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.
  5. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembly
  1. Once cooled, spread a small amount of raspberry jam on the flat side of each solid cookie.
  2. Dust the top of each cutout cookie with powdered sugar.
  3. Gently place a powdered sugar-dusted cutout cookie on top of a jam-covered solid cookie to create a sandwich.

Notes

For best results, ensure your butter is truly softened for a smooth dough. You can use any jam you prefer for the filling, such as apricot or strawberry. The dough can be made ahead of time and stored in the refrigerator for up to 2 days, or frozen for up to 1 month. If freezing, thaw in the refrigerator overnight before rolling and cutting. Adjust baking time as needed for your oven to prevent over-browning. These cookies are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3-4 days.
