Ingredients
  

Chicken Tortilla Soup
  • 2 Chicken breast cooked and shredded
  • 1 tbsp Olive oil
  • 1 Yellow onion chopped
  • 3 Garlic cloves minced
  • 1 Diced tomatoes (14.5 oz) can, undrained
  • 1 Green chilies (4 oz) can, diced
  • 6 cups Chicken broth
  • 1 Black beans (15 oz) can, rinsed and drained
  • 1 cup Corn frozen
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 0.5 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 6 Corn tortillas sliced into strips
For Serving
  • 1 Avocado diced
  • 0.25 cup Fresh cilantro chopped
  • 1 Lime cut into wedges
  • 0.5 cup Shredded Monterey Jack cheese
  • 0.25 cup Sour cream

Method
 

Making the Soup
  1. Heat olive oil in a large pot over medium heat, then add chopped onion and cook until softened, about 5 minutes.
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add diced tomatoes, green chilies, chicken broth, black beans, corn, cumin, chili powder, oregano, salt, and pepper to the pot, then bring to a simmer.
  4. Stir in the shredded chicken and continue to simmer for 15-20 minutes, allowing the flavors to meld.
  5. While the soup simmers, lightly toast the tortilla strips in a dry pan or bake in the oven until crispy.
Serving
  1. Ladle the hot soup into bowls.
  2. Garnish with toasted tortilla strips, diced avocado, fresh cilantro, a squeeze of lime, shredded cheese, and a dollop of sour cream.

Notes
