Preparation
- Separate the turkey drippings from the fat using a fat separator or by chilling and skimming, then measure out two cups of the defatted drippings.
- In a medium saucepan over medium heat, whisk the flour into the drippings until a smooth paste forms, cooking for 1-2 minutes to eliminate the raw flour taste.
- Gradually whisk in the broth, bringing the gravy to a simmer and cooking until it thickens to your desired consistency, then season with salt and pepper to taste.
Notes
For an even richer flavor, you can add a splash of white wine or a few drops of browning sauce during the simmering step. Adjust seasoning as needed based on the saltiness of your broth.
