Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Peel and cut the sweet potatoes into 1-inch cubes, then boil them in a large pot of lightly salted water until very tender, about 15-20 minutes.
Mixing and Baking
  1. Drain the sweet potatoes and mash them until smooth; then, in a large bowl, combine the mashed sweet potatoes with melted butter, milk, sugar, vanilla extract, cinnamon, and salt.
  2. In a separate small bowl, mix together the chopped pecans, brown sugar, and flour, then cut in the cold butter until the mixture resembles coarse crumbs.
  3. Spread the sweet potato mixture evenly into the prepared baking dish, sprinkle the pecan topping over it, and bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.

Notes

For extra flavor, you can add a pinch of nutmeg to the sweet potato mixture. To make ahead, assemble the casserole without baking, cover, and refrigerate for up to 24 hours. Bake as directed, adding an extra 10-15 minutes to the cooking time if baking from cold.
