  • 1/4 cup Sour cream
  • 1 cup Shredded cheddar cheese

  • 2 Green onions chopped
  • Salt and pepper to taste

Method
 

First Bake
  1. Preheat your oven to 400°F (200°C) and scrub the potatoes clean, then pierce them several times with a fork.
Second Bake
  1. Bake the potatoes for 45-60 minutes, or until tender, then cut them in half lengthwise and scoop out the flesh into a bowl, leaving a thin shell.
Prepare Filling
  1. Mash the potato flesh with butter, milk, sour cream, half of the cheese, bacon bits (if using), green onions, salt, and pepper until smooth and creamy.
Stuff and Bake
  1. Spoon the mixture back into the potato skins, top with the remaining cheese, and bake for another 10-15 minutes until heated through and the cheese is melted and bubbly.

Notes

For extra crispy skins, rub the unbaked potatoes with a little olive oil and salt before the first bake. You can also customize the filling with different cheeses or herbs for variety.
