First Bake
- Preheat your oven to 400°F (200°C) and scrub the potatoes clean, then pierce them several times with a fork.
Second Bake
- Bake the potatoes for 45-60 minutes, or until tender, then cut them in half lengthwise and scoop out the flesh into a bowl, leaving a thin shell.
Prepare Filling
- Mash the potato flesh with butter, milk, sour cream, half of the cheese, bacon bits (if using), green onions, salt, and pepper until smooth and creamy.
Stuff and Bake
- Spoon the mixture back into the potato skins, top with the remaining cheese, and bake for another 10-15 minutes until heated through and the cheese is melted and bubbly.
Notes
For extra crispy skins, rub the unbaked potatoes with a little olive oil and salt before the first bake. You can also customize the filling with different cheeses or herbs for variety.
