  • 2 bell peppers (various colors), cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1 zucchini, cut into 1-inch thick rounds
Marinade
  • 0.5 cup soy sauce
  • 0.25 cup olive oil
  • 2 tbsp honey
  • 2 cloves minced garlic
  • 1 tsp ginger, grated
  • 0.5 tsp black pepper

Preparation
  1. Prepare the marinade by whisking together soy sauce, olive oil, honey, minced garlic, grated ginger, and black pepper in a bowl.
Marinating
  1. Add the beef cubes to the marinade, ensuring they are well coated, then cover and refrigerate for at least 30 minutes, or preferably 2-4 hours.
Assembly
  1. Thread the marinated beef and vegetables (bell peppers, red onion, cherry tomatoes, and zucchini) alternately onto skewers.
Grilling
  1. Preheat your grill to medium-high heat, then grill the kabobs for 10-15 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender-crisp.

Notes

For extra flavor, soak wooden skewers in water for 30 minutes before threading to prevent burning. Serve hot with rice or a fresh salad.
