Preparation
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan. Line the pan with parchment paper, leaving an overhang on the sides for easy removal.
Mixing Dry Ingredients
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
Mixing Wet Ingredients
- In a large microwave-safe bowl, melt the unsalted butter. Add the light brown sugar and granulated sugar to the melted butter and whisk until well combined.
- Whisk in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
Combining Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chocolate chips or any other desired add-ins.
Baking
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs, not wet batter.
Cooling and Serving
- Let the blondies cool completely in the pan on a wire rack before cutting into squares. This prevents them from falling apart.
Notes
For extra chewiness, underbake slightly. You can also experiment with different add-ins like nuts, toffee bits, or white chocolate chips. Ensure all ingredients are at room temperature for a smoother batter.
