Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt; set aside.
Mixing
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the old-fashioned rolled oats and your choice of raisins or chocolate chips.
Baking
- Drop rounded tablespoons of dough onto the prepared baking sheets, ensuring they are about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are still soft.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For chewier cookies, slightly underbake them. Store cookies in an airtight container at room temperature for up to 3-4 days. You can also freeze the dough balls for later baking; simply add a few extra minutes to the baking time.
