Ingredients
  

Chicken Marinade
  • 500 g Chicken breast, thinly sliced
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 0.5 tsp Coriander
  • 0.5 tsp Turmeric
  • 0.25 tsp Cayenne pepper Optional, for heat
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
For Serving
  • 4 Pita bread
  • Tomatoes, diced
  • Cucumbers, diced
  • Tahini sauce

Method
 

Preparation
  1. Slice the chicken breast thinly and in a bowl, combine it with olive oil, lemon juice, minced garlic, cumin, paprika, coriander, turmeric, cayenne pepper (if using), salt, and black pepper.
  2. Mix everything well to ensure the chicken is evenly coated and let it marinate for at least 5 minutes, or up to 30 minutes for more flavor.
Cooking
  1. Heat a large skillet or non-stick pan over medium-high heat and add the marinated chicken.
  2. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and caramelized.
Serving
  1. Warm the pita bread and fill each with the cooked chicken, diced tomatoes, diced cucumbers, and a drizzle of tahini sauce.

Notes

For an extra crisp texture, consider broiling the chicken for 1-2 minutes after pan-frying. You can also add pickled turnips or a dash of hot sauce for an authentic touch. Optionally, prepare the tahini sauce beforehand to save time.
