Preparation
- Combine watermelon, cucumber, bell pepper, red onion, lime juice, and mint in a blender.
- Blend until the mixture is smooth and well combined.
- Taste and season with salt and pepper as needed.
- Pour the gazpacho into a large bowl or pitcher.
- Chill in the refrigerator for at least 30 minutes before serving. Serve cold and garnish with extra mint if desired.
Notes
For an extra kick, add a pinch of chili flakes to the gazpacho. You can also strain the gazpacho for a smoother consistency if preferred.
