  • 28 oz canned diced tomatoes undrained
  • 4 cups vegetable broth
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 0.5 cup heavy cream optional
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For the Grilled Cheese
  • 8 bread slices
  • 4 cheddar cheese slices or grated
  • 2 tbsp butter softened
  • 0.125 tsp salt
  • 0.125 tsp black pepper

Method
 

Make the Tomato Soup
  1. Sauté chopped onion and minced garlic in olive oil in a large pot until softened, about 5 minutes.
  2. Add diced tomatoes, vegetable broth, salt, and pepper to the pot; bring to a simmer and cook for 15-20 minutes, then blend until smooth.
  3. Stir in heavy cream if desired, and heat through gently without boiling.
Prepare the Grilled Cheese
  1. Butter one side of each bread slice, then place a slice of cheese between two unbuttered sides of bread.
  2. Cook sandwiches on a preheated skillet or pan over medium heat for 3-5 minutes per side, until golden brown and cheese is melted.

Notes
