  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat, then add chopped onion and sauté until softened, about 3-5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in cubed butternut squash, vegetable broth, salt, and pepper, then bring the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the squash is tender.
  5. Carefully transfer the soup to a blender and blend until smooth; alternatively, use an immersion blender directly in the pot.

Notes

For extra creaminess, stir in a splash of coconut milk or heavy cream at the end. Garnish with fresh herbs like sage or parsley, or toasted pumpkin seeds for added texture and flavor.
