Chicken Curry

  • 1.5 lb Chicken thighs, boneless, skinless, cut into chunks
  • 1 Onion, chopped large
  • 3 Garlic cloves, minced
  • 1 inch Ginger, grated
  • 2 tbsp Tomato paste
  • 1 can Coconut milk, full fat 13.5 oz / 400ml
  • 1 cup Chicken broth
  • 2 tbsp Cooking oil
Spices
  • 2 tbsp Curry powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Red chili powder optional
  • 1 tsp Salt or to taste
  • 0.5 tsp Black pepper or to taste
Garnish
  • 0.25 cup Fresh cilantro, chopped

Method
 

Step-by-step
  1. Heat oil in a large pot over medium heat, then sauté chopped onion until softened. Add minced garlic and grated ginger, cooking for another minute until fragrant, then add chicken pieces and cook until lightly browned on all sides.
  2. Stir in tomato paste and all the spices (curry powder, cumin, coriander, turmeric, chili powder, salt, pepper), cooking for 2-3 minutes until aromatic. Pour in coconut milk and chicken broth, then bring the mixture to a simmer.
  3. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through and tender. Stir occasionally and garnish with fresh cilantro before serving.

Notes

Serve this delicious chicken curry with steamed rice or warm naan bread. Adjust the spice level to your preference by adding more or less chili.
