- In a large bowl, toss the sliced chicken with 1 tablespoon of olive oil and fajita seasoning until well coated.
- Heat the remaining 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.
- Add the sliced bell peppers and onion to the same skillet. Sauté for 7-10 minutes, or until the vegetables are tender-crisp. Return the cooked chicken to the skillet with the vegetables and stir to combine.
- Assemble the bowls by spooning cooked rice into each bowl, then topping with the chicken and vegetable mixture. Add black beans, corn, salsa, sour cream/Greek yogurt, avocado/guacamole, and a squeeze of lime juice as desired. Serve immediately and enjoy your vibrant fajita bowl!
Notes
For extra heat, add a pinch of cayenne pepper to your fajita seasoning or top with sliced jalapeños. You can also customize your bowl with other toppings like shredded cheese or cilantro.
