Ingredients
  

Fajita Bowl
  • 1.5 lbs chicken breasts boneless, skinless, sliced
  • 3 bell peppers red, yellow, & green, sliced
  • 1 onion medium, sliced
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • 4 cups cooked rice for serving
  • 1 can black beans rinsed and drained
  • 1 cup corn fresh or frozen
  • salsa for topping
  • sour cream or Greek yogurt for topping
  • avocado or guacamole for topping
  • lime wedges for serving

Method
 

Prep & Cook
  1. In a large bowl, toss the sliced chicken with 1 tablespoon of olive oil and fajita seasoning until well coated.
  2. Heat the remaining 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Add the sliced bell peppers and onion to the same skillet. Sauté for 7-10 minutes, or until the vegetables are tender-crisp. Return the cooked chicken to the skillet with the vegetables and stir to combine.
  4. Assemble the bowls by spooning cooked rice into each bowl, then topping with the chicken and vegetable mixture. Add black beans, corn, salsa, sour cream/Greek yogurt, avocado/guacamole, and a squeeze of lime juice as desired. Serve immediately and enjoy your vibrant fajita bowl!

Notes

For extra heat, add a pinch of cayenne pepper to your fajita seasoning or top with sliced jalapeños. You can also customize your bowl with other toppings like shredded cheese or cilantro.
