  • 1.5 lbs Chicken breast, boneless, skinless, cut into 1-inch cubes
  • 2 large Bell peppers, large, assorted colors, cut into 1-inch pieces
  • 1 large Red onion, large, cut into 1-inch pieces
  • 1 medium Zucchini, medium, cut into 1/2-inch thick rounds
Marinade
  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice, freshly squeezed
  • 3 cloves Garlic, minced
  • 1 tsp Dried oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Method
 

Preparation
  1. Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl, then add chicken and vegetables, tossing to coat.
  2. Marinate the chicken and vegetables in the refrigerator for at least 30 minutes, or up to 4 hours.
Grilling
  1. Preheat your grill to medium-high heat (about 375-400°F).
  2. Thread the marinated chicken and vegetables onto skewers, alternating ingredients.
  3. Grill the kabobs for 12-15 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender-crisp.
  4. Serve immediately and enjoy your delicious chicken kabobs.

Notes

For best results, marinate the chicken for at least 30 minutes, or up to 4 hours, to allow the flavors to meld. If using wooden skewers, remember to soak them in water for at least 30 minutes before grilling to prevent burning.
