  • 8 oz pasta
  • 1 chicken breast sliced or cubed
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1.5 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese grated
  • 2 cups fresh spinach
  • salt to taste
  • black pepper to taste

Method
 

Cooking Steps
  1. Cook the pasta according to package directions until al dente; drain and set aside, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium-high heat, then add chicken and cook until browned and cooked through.
  3. Stir in minced garlic and chopped sun-dried tomatoes, cooking for about 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, bring to a simmer, then reduce heat and cook for 5-7 minutes until the sauce thickens.
  5. Remove from heat and stir in grated Parmesan cheese and fresh spinach until the spinach wilts.
  6. Add the cooked pasta to the skillet, tossing to coat with the creamy sauce; if needed, add a splash of reserved pasta water to reach desired consistency.
  7. Season with salt and black pepper to taste, then serve immediately.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. Fresh basil or parsley can be added as a garnish just before serving for a burst of freshness.
