Cooking Steps
- Cook the pasta according to package directions until al dente; drain and set aside, reserving 1/2 cup of pasta water.
- Heat olive oil in a large skillet over medium-high heat, then add chicken and cook until browned and cooked through.
- Stir in minced garlic and chopped sun-dried tomatoes, cooking for about 1 minute until fragrant.
- Pour in heavy cream and chicken broth, bring to a simmer, then reduce heat and cook for 5-7 minutes until the sauce thickens.
- Remove from heat and stir in grated Parmesan cheese and fresh spinach until the spinach wilts.
- Add the cooked pasta to the skillet, tossing to coat with the creamy sauce; if needed, add a splash of reserved pasta water to reach desired consistency.
- Season with salt and black pepper to taste, then serve immediately.
Notes
For extra flavor, you can add a pinch of red pepper flakes with the garlic. Fresh basil or parsley can be added as a garnish just before serving for a burst of freshness.
