  • 1/4 teaspoon black pepper
  • 2-3 tablespoons olive oil for frying

Instructions
  1. Grate the zucchinis using a box grater.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible, as this is crucial for crispy fritters.
  3. In a large bowl, combine the squeezed zucchini, flour, beaten egg, Parmesan cheese, chives, minced garlic, salt, and pepper; mix until just combined.
  4. Heat olive oil in a large skillet over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly, and cook for 3-5 minutes per side or until golden brown and cooked through.
  6. Remove fritters from the skillet and place them on a paper towel-lined plate to drain excess oil, then serve warm with your favorite dipping sauce.

Notes

For extra flavor, you can add a pinch of dried dill or a squeeze of lemon juice to the mixture. These fritters are best served fresh, but leftovers can be reheated in a pan for a few minutes until crispy again.
