Ingredients
  

For the Falafel
  • 15 oz canned chickpeas drained and rinsed
  • 1/2 cup fresh parsley
  • 1/4 cup cilantro
  • 1/4 cup onion chopped
  • 2 garlic cloves minced
  • 2 tbsp all-purpose flour
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • vegetable oil for frying
For the Bowl
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • tahini dressing for serving

Method
 

Falafel Preparation
  1. Combine chickpeas, parsley, cilantro, onion, garlic, flour, cumin, coriander, salt, and pepper in a food processor.
  2. Pulse until the mixture is well combined but still has some texture.
  3. Form the mixture into small patties or balls. Place them on a plate and refrigerate for 15 minutes to firm up.
Cooking the Falafel
  1. Heat about 1 inch of vegetable oil in a large skillet over medium heat.
  2. Carefully place the falafel in the hot oil, ensuring not to overcrowd the skillet.
  3. Fry for 3-4 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
Assembling the Bowl
  1. Divide cooked quinoa, cherry tomatoes, and cucumber between two bowls. Top with the freshly cooked falafel and drizzle with tahini dressing to serve.

Notes

For extra flavor, you can add a pinch of cayenne pepper to the falafel mixture. Adjust the amount of tahini dressing to your taste. This dish is great for meal prep; simply store components separately and assemble when ready to eat.
