Preparation
- Roughly chop tomatoes, cucumber, bell pepper, and onion. Mince the garlic clove.
- Combine all chopped vegetables and garlic in a large bowl with olive oil, red wine vinegar, and cold water. Season with salt and pepper.
Blending & Chilling
- Transfer the mixture to a blender and blend until completely smooth. You may need to do this in batches.
- Pour the blended gazpacho back into the bowl, cover, and chill in the refrigerator for at least 2 hours, or until thoroughly cold.
Serve
- Taste and adjust seasonings if necessary, then serve the gazpacho chilled, garnished with a drizzle of olive oil and fresh herbs if desired.
Notes
For a smoother gazpacho, you can strain the mixture through a fine-mesh sieve after blending. You can also add a slice of stale bread to the mixture before blending for a thicker consistency.
