Gazpacho (Classic)

This refreshing gazpacho is a classic chilled Spanish soup, perfect for a hot summer day. It's made with fresh, ripe vegetables and a touch of olive oil and vinegar.

Ingredients
  

Main Ingredients
  • 1 kg ripe tomatoes
  • 1 large cucumber
  • 1 green bell pepper
  • 0.5 medium red onion
  • 1 garlic clove
  • 60 ml extra virgin olive oil
  • 30 ml red wine vinegar
  • 120 ml cold water
  • salt to taste
  • black pepper to taste

Method
 

Preparation
  1. Roughly chop tomatoes, cucumber, bell pepper, and onion. Mince the garlic clove.
  2. Combine all chopped vegetables and garlic in a large bowl with olive oil, red wine vinegar, and cold water. Season with salt and pepper.
Blending & Chilling
  1. Transfer the mixture to a blender and blend until completely smooth. You may need to do this in batches.
  2. Pour the blended gazpacho back into the bowl, cover, and chill in the refrigerator for at least 2 hours, or until thoroughly cold.
Serve
  1. Taste and adjust seasonings if necessary, then serve the gazpacho chilled, garnished with a drizzle of olive oil and fresh herbs if desired.

Notes

For a smoother gazpacho, you can strain the mixture through a fine-mesh sieve after blending. You can also add a slice of stale bread to the mixture before blending for a thicker consistency.
