  • 2 medium tomatoes

  • 0.5 cup Kalamata olives pitted
  • 4 oz feta cheese crumbled
Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar optional

Preparation
  1. Chop the cucumber, tomatoes, and red onion into bite-sized pieces and combine them in a large bowl.
  2. Add the pitted Kalamata olives and crumbled feta cheese to the bowl with the chopped vegetables.
  3. In a separate small bowl, whisk together the extra virgin olive oil and red wine vinegar, if using, until well combined.
Assembly
  1. Pour the dressing over the salad ingredients and gently toss to ensure everything is evenly coated.

Notes

For best results, use fresh, ripe vegetables. You can add bell peppers for extra crunch and color. If you prefer a milder onion flavor, soak the sliced red onion in cold water for 10 minutes before adding to the salad.
