  • 2 Chicken breasts (about 1.5 lbs), boneless, skinless
  • 2 medium Sweet potatoes peeled and diced
  • 1 lb Brussels sprouts halved
  • 1 medium Red onion cut into wedges
  • 2 tbsp Olive oil
  • 1 tsp Dried thyme
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper. Cut chicken, dice sweet potatoes, halve Brussels sprouts, and slice red onion into wedges.
  2. In a large bowl, combine the chopped vegetables with olive oil, thyme, paprika, salt, and pepper, tossing until evenly coated.
Cooking
  1. Spread the seasoned vegetables in a single layer on the prepared baking sheet. Place the chicken breasts among the vegetables.
  2. Roast for 25-30 minutes, or until chicken is cooked through and vegetables are tender and slightly caramelized. Flip vegetables halfway through for even cooking.
Serving
  1. Carefully remove the baking sheet from the oven. Let the dish rest for a few minutes before serving.

Notes

Feel free to experiment with other fall vegetables like butternut squash or carrots, and different herbs such as rosemary or sage. For a vegetarian option, substitute chicken with chickpeas or firm tofu.
