  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 zucchini thinly sliced
  • 1 cup cherry tomatoes halved
Sauce
  • ΒΌ cup soy sauce or tamari for gluten-free
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger grated
For Serving
  • Cooked rice or noodles for serving

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet or wok over medium-high heat, then add the chopped onion and cook for about 3 minutes until softened.
  2. Add minced garlic, sliced bell pepper, and broccoli florets, then stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  3. Stir in the snap peas and thinly sliced zucchini, continuing to cook for another 2-3 minutes.
  4. In a small bowl, whisk together soy sauce, honey or maple syrup, rice vinegar, and grated fresh ginger to create the sauce.
  5. Pour the prepared sauce over the vegetables, add the halved cherry tomatoes, and toss to coat; cook for 1 minute.
  6. Serve the Healthy Summer Vegetable Stir-fry immediately over cooked rice or noodles.

Notes

For added protein, you can add cooked chicken, tofu, or shrimp during the last few minutes of cooking. Adjust spice level by adding a pinch of red pepper flakes with the sauce.
