  • 2 lbs Heirloom tomatoes
  • 1 Baguette (about 16 inches)
  • 2-3 Garlic cloves
  • 1/4 cup Fresh basil chopped
  • 1/4 cup Extra virgin olive oil plus more for drizzling
  • 2 tbsp Balsamic glaze
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Dice the heirloom tomatoes and place them in a bowl. Add chopped fresh basil, a drizzle of olive oil, salt, and pepper, then gently toss to combine and set aside.
  2. Slice the baguette into 1/2-inch thick rounds. Brush each side lightly with olive oil and toast the bread in a hot pan, oven, or toaster until golden and crispy.
  3. Once toasted, immediately rub one side of each bread slice with a cut garlic clove to infuse flavor.
  4. Spoon the tomato mixture generously over each garlic-rubbed toast. Drizzle with balsamic glaze just before serving.

Notes

For the best flavor, use ripe, in-season heirloom tomatoes.
