Ingredients

Main Dough
  • 2 cups All-purpose flour
  • 0.75 cup Warm milk
  • 2.25 teaspoons Active dry yeast
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 2 tablespoons Unsalted butter, melted
  • 1 Egg, large
Egg Wash
  • 1 Egg yolk
  • 1 tablespoon Water

Equipment

  • Large bowl
  • Baking sheet
  • Parchment paper

Method

Preparation
  1. In a large bowl, combine warm milk, sugar, and active dry yeast; let it sit for 5-10 minutes until foamy, indicating the yeast is active.
  2. Add flour, salt, melted butter, and egg to the yeast mixture, then mix until a shaggy dough forms.
Kneading and First Rise
  1. Turn the dough onto a lightly floured surface and knead for 5-7 minutes until it becomes smooth and elastic.
  2. Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
Shaping and Second Rise
  1. Gently punch down the risen dough, divide it into three equal portions, and shape each portion into a smooth ball.
  2. Place the shaped rolls on a baking sheet lined with parchment paper, cover loosely with plastic wrap, and let them rise again for 30-45 minutes.
Baking
  1. Preheat your oven to 375°F (190°C) and prepare an egg wash by whisking the egg yolk with water.
  2. Brush the tops of the risen rolls with the egg wash and bake for 15-20 minutes, or until golden brown and cooked through.

Notes

Ensure your milk is warm (105-115°F / 40-46°C) to properly activate the yeast. Do not overheat, as it can kill the yeast. For an extra soft interior, add a tablespoon of potato flour to the dry ingredients. These rolls are best served warm, fresh from the oven, and can be stored in an airtight container for up to 3 days or frozen for longer.
