Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
Mixing
- In a separate bowl, combine the pumpkin puree, granulated sugar, eggs, vegetable oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined, being careful not to overmix.
Baking
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For extra flavor, you can add 1/2 cup of chopped nuts (like walnuts or pecans) or chocolate chips to the batter. This bread freezes well! Wrap cooled bread tightly in plastic wrap and then foil, and freeze for up to 3 months.
