Ingredients

For the Strawberry Syrup
  • 2 cups fresh strawberries, hulled and quartered
  • 1 cup granulated sugar
  • 1 cup water
For the Soda
  • 1/4 cup fresh lime juice
  • 4 cups cold sparkling water or club soda
  • ice for serving
  • fresh strawberry slices and lime wedges for garnish

Equipment

  • medium saucepan
  • fine-mesh sieve
  • bowl
  • pitcher
  • glasses

Method

Make the Strawberry Syrup
  1. Combine strawberries, sugar, and water in a medium saucepan and bring to a simmer over medium heat, stirring until the sugar dissolves.
  2. Reduce heat to low and simmer for 10 minutes, or until the strawberries have softened and released their juices, then remove from heat and let cool slightly.
  3. Strain the mixture through a fine-mesh sieve into a clean bowl, pressing on the solids to extract all the juice, then discard the solids and let the syrup cool completely to room temperature, then chill in the refrigerator.
Assemble the Soda
  1. In a large pitcher, combine the chilled strawberry syrup and fresh lime juice, stirring well.
  2. To serve, fill glasses with ice, pour in about 1/4 to 1/3 cup of the strawberry-lime mixture, and top with cold sparkling water or club soda, adjusting to taste.
  3. Garnish each glass with fresh strawberry slices and lime wedges before serving immediately.

Notes

For a sweeter drink, add a little more syrup. For a tarter drink, add a splash more lime juice. You can also experiment with other red fruits like raspberries or cherries for variations on the Red Drink.
