  • 2 lemons sliced
  • 4 fresh rosemary sprigs
  • 4 fresh thyme sprigs
  • 4 garlic cloves minced
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a roasting pan.
  2. Pat the chicken dry with paper towels, then rub it with olive oil, salt, and pepper.
  3. Stuff the chicken cavity with lemon slices, rosemary, thyme, and minced garlic.
Cooking
  1. Roast the chicken for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Let the chicken rest for 5 minutes before carving and serving.

Notes

For extra crispy skin, try broiling the chicken for the last few minutes of cooking. This recipe is also great with other herbs like sage or oregano.
