Preparation
- Preheat oven to 325°F (160°C) and prepare a 12-cup bundt or two loaf pans by generously greasing and flouring them.
- In a large bowl, cream the softened butter with granulated sugar until light and fluffy, then beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
- In a separate bowl, whisk together the flour, baking powder, and salt; then gradually add these dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
- Gently fold in the diced peaches and vanilla extract into the batter, being careful not to overmix, then pour the batter evenly into the prepared pan.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean, checking for doneness.
- Allow the cake to cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
