Preparation
- Gather all your ingredients for the chosen soup recipe, ensuring vegetables are washed and chopped, and any proteins are prepared.
- Heat olive oil in a large pot or Dutch oven over medium heat, then sauté aromatic vegetables like onions, carrots, and celery until softened.
- Add any desired protein and cook until browned, then stir in spices and herbs, cooking for another minute until fragrant.
Cooking
- Pour in the broth, add remaining vegetables and legumes, and bring the mixture to a boil.
- Reduce heat to a simmer, cover, and cook for 30-60 minutes, or until all vegetables are tender and flavors have melded.
- Season with salt and pepper to taste, then stir in any fresh greens or delicate herbs during the last few minutes of cooking.
Serving
- Ladle the hot soup into bowls and serve immediately, optionally garnished with fresh herbs, a dollop of yogurt, or crusty bread.
Notes
For variety, experiment with different combinations of vegetables, proteins, and spices. You can also make these soups in a slow cooker by combining all ingredients (except delicate greens) and cooking on low for 6-8 hours or on high for 3-4 hours.
