Preparation
- Toss beef cubes with flour, salt, and pepper in a bowl until evenly coated.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
Cooking
- Sear beef in batches until browned on all sides, then remove and set aside.
- Add onions, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Stir in garlic and cook for another minute.
- Return beef to the pot, then stir in beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaves.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1.5 hours, stirring occasionally.
- Add potatoes to the stew and continue to simmer, covered, for another 30-45 minutes, or until potatoes are tender and beef is very tender.
- Remove bay leaves before serving.
Serving
- Ladle the beef stew into bowls and garnish with fresh parsley, if desired.
Notes
For a thicker stew, you can uncover the pot during the last 15-20 minutes of cooking to allow some of the liquid to evaporate. Alternatively, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 10 minutes of cooking.
