Prepare Chicken
- Cut chicken breasts into 1-inch pieces and place them in a bowl.
- Combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper; pour over chicken and toss to coat.

Make Tzatziki Sauce
- In a medium bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, lemon juice, chopped dill, and salt.
- Mix well and refrigerate until ready to serve.
Cook Chicken
- Heat a large skillet over medium-high heat.
- Add marinated chicken and cook for 5-7 minutes, or until cooked through and lightly browned.
Assemble Bowls
- Divide cooked quinoa or rice among three bowls.
- Top each with cooked chicken, cherry tomatoes, diced cucumber, sliced red onion, and Kalamata olives.
- Garnish with crumbled feta cheese and a dollop of tzatziki sauce.
