Chicken
  • 1.5 lbs chicken breasts
Marinade
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 0.5 cup cucumber grated and squeezed dry
  • 1 clove minced garlic
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 0.25 tsp salt
Bowl Components
  • 3 cups cooked quinoa or rice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red onion thinly sliced
  • 0.5 cup Kalamata olives pitted and halved
  • 0.5 cup feta cheese crumbled

Method
 

Prepare Chicken
  1. Cut chicken breasts into 1-inch pieces and place them in a bowl.
  2. Combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper; pour over chicken and toss to coat.
  3. Marinate for at least 30 minutes, or longer in the refrigerator.
Make Tzatziki Sauce
  1. In a medium bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, lemon juice, chopped dill, and salt.
  2. Mix well and refrigerate until ready to serve.
Cook Chicken
  1. Heat a large skillet over medium-high heat.
  2. Add marinated chicken and cook for 5-7 minutes, or until cooked through and lightly browned.

  1. Divide cooked quinoa or rice among three bowls.
