  • 3 ears of corn husked and cleaned
  • 1/4 cup mayonnaise
  • 2 tbsp sour cream
  • 1/4 cup cotija cheese crumbled
  • 1 lime juiced
  • 1/2 tsp chili powder
  • 2 tbsp fresh cilantro chopped
  • salt to taste
  • pepper to taste

Method
 

Preparation
  1. Preheat your grill to medium-high heat and clean the grates.
  2. In a small bowl, combine mayonnaise, sour cream, crumbled cotija cheese, lime juice, chili powder, and chopped cilantro; mix well and set aside.
Grilling
  1. Place the husked and cleaned corn directly on the preheated grill.
  2. Grill for 10-15 minutes, turning occasionally, until kernels are tender and lightly charred.
Assembly
  1. Remove the grilled corn from the grill.
  2. Generously spread the prepared mayonnaise mixture over each ear of corn.
  3. Season with salt and pepper to taste, and serve immediately.
