Preparation
- Preheat your grill to medium-high heat and clean the grates.
- In a small bowl, combine mayonnaise, sour cream, crumbled cotija cheese, lime juice, chili powder, and chopped cilantro; mix well and set aside.
Grilling
- Place the husked and cleaned corn directly on the preheated grill.
- Grill for 10-15 minutes, turning occasionally, until kernels are tender and lightly charred.
Assembly
- Remove the grilled corn from the grill.
- Generously spread the prepared mayonnaise mixture over each ear of corn.
- Season with salt and pepper to taste, and serve immediately.
Notes
