Preparation
- Prepare the sauce by mixing soy sauce, oyster sauce, sesame oil, sugar, and white pepper in a small bowl.
- Pat the shrimp dry and season with a pinch of salt and pepper.
Cooking
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook for 2-3 minutes per side until pink and cooked through, then remove and set aside.
- Add the remaining 1 tablespoon of oil to the skillet, then pour in the beaten eggs and scramble them until cooked, breaking them into small pieces and setting aside.
- Add the diced carrots to the skillet and stir-fry for 2-3 minutes until slightly tender.
- Add the minced garlic and grated ginger, stir-frying for 30 seconds until fragrant.
- Add the cooked rice to the skillet, breaking up any clumps, and stir-fry for 3-4 minutes to heat through.
- Stir in the frozen peas and cooked shrimp.
- Pour the prepared sauce over the rice mixture and stir well to combine, cooking for another 1-2 minutes.
- Finally, add the scrambled eggs and chopped green onions, tossing everything together for about 1 minute.
- Taste and adjust seasoning if needed, then serve hot.
Notes
For best results, use day-old cooked rice as it's drier and fries better, preventing a mushy texture. You can customize this recipe by adding other vegetables like bell peppers or corn. Adjust the amount of chili garlic sauce to your spice preference.
