  • 2 eggs beaten
  • 1 carrots diced
  • 0.5 cup frozen peas
  • 3 green onions chopped
Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon sugar
  • 0.25 teaspoon white pepper
For Cooking
  • 2 tablespoons vegetable oil
  • 2 garlic minced
  • 1 teaspoon ginger grated
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. Prepare the sauce by mixing soy sauce, oyster sauce, sesame oil, sugar, and white pepper in a small bowl.
  2. Pat the shrimp dry and season with a pinch of salt and pepper.
Cooking
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through, then remove and set aside.
  3. Add the remaining 1 tablespoon of oil to the skillet, then pour in the beaten eggs and scramble them until cooked, breaking them into small pieces and setting aside.
  4. Add the diced carrots to the skillet and stir-fry for 2-3 minutes until slightly tender.
  5. Add the minced garlic and grated ginger, stir-frying for 30 seconds until fragrant.
  6. Add the cooked rice to the skillet, breaking up any clumps, and stir-fry for 3-4 minutes to heat through.
  7. Stir in the frozen peas and cooked shrimp.
  8. Pour the prepared sauce over the rice mixture and stir well to combine, cooking for another 1-2 minutes.
  9. Finally, add the scrambled eggs and chopped green onions, tossing everything together for about 1 minute.
  10. Taste and adjust seasoning if needed, then serve hot.

Notes

For best results, use day-old cooked rice as it's drier and fries better, preventing a mushy texture. You can customize this recipe by adding other vegetables like bell peppers or corn. Adjust the amount of chili garlic sauce to your spice preference.
