Preparation
  1. Grate the zucchini and place it in a colander. Sprinkle with a pinch of salt and let it sit for 10 minutes to draw out excess moisture.
  2. Firmly squeeze the grated zucchini to remove as much liquid as possible. This step is crucial for crispy fritters.
Mixing & Frying
  1. In a medium bowl, combine the squeezed zucchini, egg, flour, Parmesan cheese, salt, and pepper. Mix well until everything is evenly incorporated.
  2. Heat the vegetable oil in a large frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the hot pan, flattening them slightly to form fritters.
  3. Cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the fritters from the pan and place them on a paper towel-lined plate to drain any excess oil.
