Preparation
- Grate the zucchini and place it in a colander. Sprinkle with a pinch of salt and let it sit for 10 minutes to draw out excess moisture.
- Firmly squeeze the grated zucchini to remove as much liquid as possible. This step is crucial for crispy fritters.
Mixing & Frying
- In a medium bowl, combine the squeezed zucchini, egg, flour, Parmesan cheese, salt, and pepper. Mix well until everything is evenly incorporated.
- Heat the vegetable oil in a large frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the hot pan, flattening them slightly to form fritters.
- Cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the fritters from the pan and place them on a paper towel-lined plate to drain any excess oil.
Notes
For extra crispy fritters, ensure you squeeze out as much moisture as possible from the grated zucchini. Serve immediately with a dollop of sour cream or a sprinkle of fresh herbs.
