Ingredients

Main Ingredients
  • 5 lbs carrots
  • 2-3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
Optional Additions
  • fresh rosemary or thyme chopped
Optional Garnish
  • fresh parsley chopped

Equipment

  • Baking sheet
  • Large bowl
  • Vegetable peeler
  • Cutting board
  • Knife

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Wash and peel the carrots, then cut them into uniform 1-inch pieces or spears to ensure even cooking.
  3. In a large bowl, toss the prepared carrots with olive oil, salt, and black pepper until evenly coated; add optional herbs if desired.
Roasting
  1. Spread the seasoned carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow for proper caramelization.
  2. Roast for 25-35 minutes, stirring halfway through, until the carrots are tender-crisp and lightly caramelized at the edges.
Serving
  1. Remove from oven and serve immediately, garnished with fresh parsley if desired.

Notes

For extra flavor, try adding a drizzle of maple syrup or a pinch of garlic powder before roasting. Do not overcrowd the baking sheet; if roasting a very large batch, use two sheets to ensure even browning.
