  • 1 tbsp sesame seeds
  • 2 green onions sliced

Method
 

Prepare the Chicken
  1. Toss chicken pieces with beaten egg, then coat thoroughly in cornstarch, ensuring each piece is well covered.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Fry chicken in batches for 3-4 minutes per side until golden brown and cooked through, then remove and drain on a paper towel-lined plate.
Make the Sauce
  1. In a medium saucepan, whisk together soy sauce, honey, rice vinegar, sesame oil, brown sugar, minced garlic, and grated ginger.
  2. Bring the sauce to a simmer over medium heat.
  3. In a small bowl, dissolve cornstarch in water to create a slurry, then whisk it into the simmering sauce and cook until thickened.
Combine and Serve
  1. Add the fried chicken to the thickened sauce, tossing to coat every piece evenly.
  2. Garnish with sesame seeds and sliced green onions before serving immediately with rice or noodles.

Notes

For extra crispiness, you can double-fry the chicken. Ensure your oil is hot enough before frying to prevent soggy chicken. Adjust sweetness and spice to your preference by modifying honey/brown sugar and adding a pinch of red pepper flakes to the sauce, respectively.
