  • 1 lb chicken breast cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 cup carrots sliced thinly
  • 1 bell pepper sliced, any color
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tsp ginger grated
  • 2 cloves garlic minced
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water

Method
 

Preparation
  1. In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, sesame oil, cornstarch, and water to create the stir-fry sauce.
  2. Cut the chicken breast into bite-sized pieces, chop the broccoli into florets, thinly slice the carrots, and slice the bell pepper.
Cooking
  1. Heat a large skillet or wok over medium-high heat with a tablespoon of oil, then add the chicken and cook until browned and cooked through.
  2. Add the broccoli, carrots, and bell pepper to the skillet and stir-fry for 3-5 minutes until the vegetables are crisp-tender.
  3. Pour the prepared sauce over the chicken and vegetables, stirring constantly until the sauce thickens and coats everything evenly.
Serving
  1. Serve the chicken stir fry immediately over rice or noodles for a complete meal.

Notes

For extra heat, add a pinch of red pepper flakes with the sauce. You can also customize the vegetables based on your preferences, such as adding snow peas, mushrooms, or snap peas.
