Prepare the Crust
- Pulse flour, sugar, and salt in a food processor, then cut in very cold butter until coarse crumbs form. Gradually add ice water, pulsing until the dough just comes together, forming a shaggy ball.
- Flatten the dough into a disk, wrap it in plastic, and chill for at least 30 minutes to an hour.
Prepare the Filling
- In a large bowl, gently toss sliced peaches with granulated sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Allow the mixture to sit for 10 minutes to macerate.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Assemble the Galette
- Roll out the chilled dough on a lightly floured surface into a 12-inch circle. Transfer it carefully to the prepared baking sheet.
- Arrange the peach slices in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the peaches, pleating as you go.
- Brush the crust with beaten egg and sprinkle generously with turbinado sugar.
Bake and Serve
- Bake for 35-45 minutes, or until the crust is golden brown and the peaches are tender and bubbly.
- Let the galette cool on the baking sheet for at least 15-20 minutes before slicing. Serve warm, optionally with vanilla ice cream or whipped cream.
Notes
For extra flavor, you can add a pinch of nutmeg to the peach filling. If your peaches are very sweet, you can reduce the amount of granulated sugar by a tablespoon or two. Ensure your butter is very cold for a flaky crust.
