Preparation
- Wash and chop all vegetables into bite-sized pieces, ensuring even sizing for consistent cooking.
Cooking the Soup
- Heat olive oil in a large pot or Dutch oven over medium heat, then add chopped carrots, celery, and onions.
- Sauté the vegetables for 5-7 minutes until they start to soften, then add the minced garlic and cook for another minute until fragrant.
- Stir in the diced potatoes, zucchini, canned diced tomatoes (undrained), vegetable broth, dried thyme, and dried oregano.
