  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt to taste
  • black pepper to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Preparation
  1. Wash and chop all vegetables into bite-sized pieces, ensuring even sizing for consistent cooking.
Cooking the Soup
  1. Heat olive oil in a large pot or Dutch oven over medium heat, then add chopped carrots, celery, and onions.
  2. Sauté the vegetables for 5-7 minutes until they start to soften, then add the minced garlic and cook for another minute until fragrant.
  3. Stir in the diced potatoes, zucchini, canned diced tomatoes (undrained), vegetable broth, dried thyme, and dried oregano.
  4. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the potatoes and other vegetables are tender.
  5. Season the soup with salt and black pepper to taste, adding more if needed.
